BLUEBERRY COBBLER

Cook Time: 30 minutes
Total Time: 1 hour

Ingredients:
2/3 cup sugar
2 tablespoons cornstarch
3/4 cup water
3 cups fresh or frozen blueberries
1 teaspoon melted butter
1 teaspoon ground cinnamon
1 cup sifted all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/3 cup milk
3 tablespoons melted butter

PREPARATION:
-In a saucepan, combine sugar & cornstarch, stir in water. Bring to a boil; stirring constantly, boil for 1 minute. Add blueberries. Pour blueberry mixture into a lightly buttered 1 1/2-quart baking dish or 9-inch pie plate. -Sprinkle with cinnamon & drizzle with 1 teaspoon melted butter.
-Sift together the flour, baking powder & salt. Pour milk & 3 tablespoons melted butter into a measuring cup; add to flour mixture all at once. Stir just until mixture is moistened and forms a ball. Drop spoonfuls onto the blueberries. 
-Bake at 425° for 25 to 30 minutes, or until lightly browned.
Serves 6


CHOCOLATE CHIP QUICK BREAD


Cook Time: 1 hour
Total Time: 1 hour 15 minutes

INGREDIENTS
1/2 cup butter
1/2 cup sugar
2 eggs
2 cups flour
2 tsp baking powder
1/2 cup milk
1 cup milk chocolate chips
    PREPARATION:
    -Cream butter & sugar.  Add eggs 1 at a time.  Beat well.  Combine flour & baking powder.  Add to batter alternately with milk.  Beat well.  Add chocolate chips.  Beat well.  Bake in crock, which has been greased & floured, for 1 hour @ 350 degrees.
    Serves 4-6


    Simple Cinnamon Streusel Muffins

    Cook Time: 20 minutes
    Total Time: 40 minutes

    INGREDIENTS:Streusel Topping
    ½  cup all-purpose flour
    ⅓ cup firmly packed brown sugar
    1  teaspoon cinnamon
    3 tablespoons cold butter
    ¼ cup rolled oats
    ½ cup chopped walnuts or pecans(optional)
    Muffins
    2  cups all-purpose flour
    ½ cup sugar
    ¼  cup firmly packed brown sugar
    1  tablespoon baking powder
    1  teaspoon cinnamon
    ½  teaspoon salt
    ¾ cup milk
    ½   cup butter, melted
    1  teaspoon vanilla
    2  eggs, beaten
    1 cup grated carrot (optional)
    1 cup chopped walnuts or pecans (optional)

    PREPARATION:
    -Heat the oven to 400°F. Lightly spray 12 cups in a muffin pan with nonstick cooking spray or grease with shortening.
    Streusel Topping
    -Combine the flour, brown sugar, and cinnamon & oats in a small bowl. Cut in the butter with a fork until the mixture resembles coarse crumbs.
    Muffins
    -Combine the flour, sugar, brown sugar, baking powder, cinnamon & salt in a large bowl. Make a well in the center of the flour by pushing ingredients out toward sides of bowl.
    -Combine the milk, melted butter, vanilla, and eggs in a medium bowl. Pour the milk mixture into the flour mixture & stir until the flour is moistened.
    -Divide the batter into prepared muffin cups, filling them about 2/3 full. Sprinkle about 1 tablespoon of streusel over each muffin.
    -Bake 18 to 20 minutes or until golden brown & a toothpick inserted in the center of a muffin comes out dry. Cool slightly. Run a small metal fork around the edge of each muffin to loosen it & lift gently from the pan. Serve muffins warm with butter.
    Makes 12 muffins



    BEST-EVER BASIC COOKIE DOUGH

    Cook Time: 10 minutes
    Total Time: 20 minutes

    INGREDIENTS:
    1 1/2 cups packed brown sugar
    1/4 cup + 2 TBSP margarine or butter
    1 Egg
    1 tsp. vanilla extract
    1 1/2 cups all-purpose flour
    1/4 tsp salt
    1/4 tsp baking soda

    PREPARATION:
    -Cream sugar & margarine or butter together in a bowl.
    -Add egg & vanilla extract.
    -Beat or stir mixture together, scraping down sides of bowl.
    -Sift together flour, salt & baking soda in a separate bowl.
    -Spoon dry mixture into creamed mixture.
    -Beat or stir until the cookie dough is completely mixed together.
    Makes 40 cookies


    CRANBERRY WALNUT COOKIES

    Cook time: 10-12 minutes
    Total Time: 25 minutes

    PREPARATION:
    -Preheat oven to 375 degrees.
    *Prepare the BEST-EVER BASIC COOKIE DOUGH recipe above*
    Add:
    1 cup rolled oats
    3/4 cup dried sweetened cranberries
    3/4 cup chopped walnuts
    3/4 cup white chocolate chips
    -Lightly spray baking cookie sheet with non-stick cooking spray.
    -Drop cookies by rounded TBSP onto the baking cookie sheet.
    -Bake for 10 minutes or until lightly browned around the edges.
    -Let sit for 1 minute.
    -Remove from baking cookie sheet to cool.
    Makes 40 cookies
